Fly the W!

Well, the World Series is in full swing, and I could care less.

That’s not generally true. I really do love baseball, but once the Mets just destroyed the Cubs in the NLCS, I kind-of lost interest.

However, Bubba and I are still having fun with our W flag!

Pintrest success (kind-of) – Zucchini Bites

In my desperate need to lose some baby weight (my kid is almost 1!) I pinned this recipe for Zucchini Bites.

Did mine turn out? Let’s see!

1 cups zucchini
1 egg
1/4 onion
1/4 cup cheese (I used what ever grated cheese I had in my fridge – it was ‘mexican’ style)
1/4 cup bread crumbsSalt and Pepper

Step 1 – Grate 1 big zucchini. Let’s face it, grating things is a huge pain. Thankfully, zucchini is SUPER EASY to grate. It only took me a few seconds to grate the entire thing.


In hindsight, I think I’ll grate them using the smaller holes next time.

Step 2 – Put all your zucchini shavings on a towel or rag, and soak up as much liquid as possible. Turns out zucchini are super liquidy, and you don’t want mushy zucchini bites.

I made a rag/zucchini taco!

Step 3 – Notice you’ll need 1/4 of an onion. I was too lazy to chop that up, so I just grated it, since I already had a dirty grater on my hands.


I didn’t measure anything. I just grated maybe 1/3 of the onion.

Step 4 – mix your ‘dried’ zucchini, your grated onion, and all the other ingredients into a bowl. Mix.

Of course, I added in some flax seed. I throw that stuff in everything.

Step 5 – Spray those muffin cups with Pam (or generic Wal-mart Pam). Fill muffin cups about 2/3 full. Press down on the zucchini mixture.


Bake at 400 for 20 minutes. Then broil for a few minutes to get the tops all crispy.

Now, here’s where the wheels fall off of my zucchini. I forgot to turn off the broiler! Little Bubba was going nuts!

Oddly enough, they still tasted pretty good though.

Bubba @ WDW – Epcot (Air Supply!)

For the past 2 years Air Supply has been one of the Eat to the Beat concerts at Epcot, and every year I’ve had to miss it. Probably because of work.

Well, this year (I’m working part time now!) I wasn’t going to miss it for the world!

My Dad raised me on Air Supply, and they sounded just as amazing now as they did back in the early 80s!

This video is a bit longer than my ususal ‘Bubba @ WDW’ videos, because I had to get every Air Supply song it’s air time.

Happy “Back to the Future” Day!

Unless you’re living under a rock, you’ve probably seen all over the web that today (10/21/15) is the day that Marty McFly visits in Back to the Future 2.

I was 10 years old in 1985, so I was fully aware of how awesome BttF is, and how amazingly cute Michael J. Fox was (still is!).

A quick personal story: a few years ago I saw Tom Wilson, who played Biff in all 3 movies. Besides an actor, he’s an amazing comedian and musician.

Tom opened up his comedy act with a quick song. It was all about BttF and to SHUT UP about it, because he was going to talk about other funny stuff. It was cute and pretty hilarious. Poor guy … I’m sure most people don’t even know his real name. Just “Biff”. ๐Ÿ™‚

After the show he signed my DVD!

Bubba @ WDW – Wilderness Lodge

Our family recently went out for lunch at Whispering Canyon, since the Wilderness Lodge.

The Wilderness Lodge is just cool. I mean, how many hotels have their own geyser and 5 story lobby? It truly feels like you’re in the old west … that’s got all the amenities of the 2000s.

Whispering Canyon has this ‘all you can eat’ option. Foolishly, my husband and I both ordered it, so the waiter just brought out a family style platter for us to munch on.

For a ‘once in a life’ meal, it was good, and fun to just pig out. My favorite items were the mashed potatoes (with skin!), the chicken legs were good, and the sausage was amazing! Seriously, I couldn’t get enough sausage.

We both rolled out of there after an hour gorge-fest. Yum!
